Kale Salad with Sun-dried Tomatoes, Artichoke Hearts & Sunflower Seeds

4 Bunches Curly Kale, de-stemmed and cut in ribbons
1 cup Sun-dried tomatoes, marinated in olive oil, drained and
1 cup Artichoke hearts, canned, drained and chopped into bite
1 cup Pumpkin seeds
1 cup Organic virgin olive oil
0.5 cup fresh lemon juice
0.5 cup organic apple cider vinegar
1 clove Organic garlic, minced
1 tsp Organic honey
Salt and Pepper to taste


  1. Make the dressing by combining olive oil, lemon juice, apple cider vinegar,
    minced garlic, honey.
  2. Massage kale with dressing.
  3. Add tomatoes, artichoke hearts and pumpkin seeds and toss together.
