4 Bunches Curly Kale, de-stemmed and cut in ribbons
1 cup Sun-dried tomatoes, marinated in olive oil, drained and
1 cup Artichoke hearts, canned, drained and chopped into bite
1 cup Pumpkin seeds
1 cup Organic virgin olive oil
0.5 cup fresh lemon juice
0.5 cup organic apple cider vinegar
1 clove Organic garlic, minced
1 tsp Organic honey
Salt and Pepper to taste
- Make the dressing by combining olive oil, lemon juice, apple cider vinegar,
minced garlic, honey.
- Massage kale with dressing.
- Add tomatoes, artichoke hearts and pumpkin seeds and toss together.
