Kale & White Bean Soup

Serves 6


2 Tbsp Organic avocado oil
1 lbs Dried white beans, such as Great Northern, Cannellini, Navy
1 each Bay leaf
1 each Organic medium onions, finely chopped
4 each Organic carrots, halved lengthwise and cut crosswise into 1/4
inch thick
3 cloves Cloves garlic, peeled, minced
1 tsp Ground nutmeg
1 tsp Rosemary, fresh, finely chopped
1.0 lbs Organic kale, stems and center ribs discarded and leaves coarsely chopped
13.0 cups Vegetable broth and/or water
Salt and Pepper to taste


  1. Cover beans with water in a bowl and let sit overnight.
  2. In a large pot, cook the onions in oil over medium heat until softened. Add garlic and
    cook stirring for a minute.
  3. Add beans, broth, salt and pepper, bay leaves, rosemary and simmer till beans are
    just tender, about 1 hour.
  4. Add carrots and kale and simmer till tender, about 10 minutes.
    5 Taste and season with salt and pepper.
