Cinnamon Spice Cookie Bites

You deserve a treat!  If you are craving a hint of sweetness and don’t have time to bake, why not try our Cinnamon Spice Cookie Bites?  Add chocolate chips or substitute the raisins with dried cranberries for a little variation. These treats are full of complex carbs, protein, fiber and healthy fats.  They make a quick and easy, any-time-of-day snack!

Preparation time: 20 minutes

Yield: Approximately 20, 1” bites

Ingredients:

  • 4 tablespoons Miyoko’s or other vegan butter
  • 1/3 cup raisins
  • 3 tablespoons maple syrup or honey
  • 2 teaspoons vanilla extract
  • 1 1/2 cups old fashioned oatmeal or rolled oats
  • 6 tablespoons nut or seed butter: sunflower, almond, peanut
  • 3/4 cup chopped walnuts
  • 2 teaspoons cinnamon

Optional Add:  2 tablespoons ground flaxseed meal or ground chia seeds

Preparation: 

Melt the butter, maple syrup or honey and vanilla.  Add the raisins and mix.  Let sit while you prepare the other ingredients.

Combine the remaining ingredients in a large bowl and mix.  Add the raisin mixture and combine until uniformly mixed.  Add more cinnamon, maple syrup or honey as desired.

Cover bowl and chill in refrigerator for 1/2 hour.  Once chilled, roll into 1” balls and store in an airtight container, refrigerated for up to one week.
