Add chocolate chips or substitute the raisins with dried cranberries for a little variation. These treats are full of complex carbs, protein, fiber and healthy fats. They make a quick and easy, any-time-of-day snack!
Preparation time: 20 minutes
Yield: Approximately 20, 1” bites
Ingredients:
- 4 tablespoons Miyoko’s or other vegan butter
- 1/3 cup raisins
- 3 tablespoons maple syrup or honey
- 2 teaspoons vanilla extract
- 1 1/2 cups old fashioned oatmeal or rolled oats
- 6 tablespoons nut or seed butter: sunflower, almond, peanut
- 3/4 cup chopped walnuts
- 2 teaspoons cinnamon
Optional Add: 2 tablespoons ground flaxseed meal or ground chia seeds
Preparation:
Melt the butter, maple syrup or honey and vanilla. Add the raisins and mix. Let sit while you prepare the other ingredients.
Combine the remaining ingredients in a large bowl and mix. Add the raisin mixture and combine until uniformly mixed. Add more cinnamon, maple syrup or honey as desired.
Cover bowl and chill in refrigerator for 1/2 hour. Once chilled, roll into 1” balls and store in an airtight container, refrigerated for up to one week.
