Turkey Bolognese

This is an easy-to-prepare and healthy pasta sauce recipe. The flavorful, rich sauce tastes like it’s been simmering all day, but it’s ready in less than one hour.
Pick your favorite pasta shape and add sauce! It is delicious and perfect for a weeknight dinner!

Preparation time: 30-40 minutes
Yield: 6 servings

Ingredients:

  • 1 pound ground turkey
  • 2 garlic cloves, minced
  • 3 cups tomato puree
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1/2 yellow onion, chopped
  • 2 pounds of organic pasta*
  • 2 tablespoons, tomato paste
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil

Optional:

Freshly grated Parmesan cheese
Vegetable or chicken/turkey broth for deglazing
*You may use whole wheat or other pasta of your choice if organic is not available.

Preparation:

In a large sauté pan, heat the olive oil over medium heat. Add carrots, celery, & onion, and sauté’ until the vegetables begin to soften. Break up the ground turkey and add to the vegetables, along with the garlic, salt, and

pepper. Cook over medium heat until browned and cooked through about 10 minutes.

While meat sauce is simmering boil the pasta according to the time indicated on the package. When done, drain and set aside.

Once the turkey is cooked through, deglaze** the pan with a small amount of broth or water. Add tomato paste and caramelize to a dark red color.
Add tomato puree and simmer for an additional 20 minutes to allow for all the flavors to emerge.

Combine sauce with pasta to coat and adjust seasoning as desired.
Freshly grated parmesan cheese may be added if desired.

**Deglazing is simply the act of adding liquid to a hot pan, which allows all of the caramelized bits stuck to the bottom to release.
