Baking time: 15-18 minutes
Yield: 10-12 bars
Ingredients:
- 1 15-ounce can of black beans (drained and rinsed)
- 2 tablespoons cocoa powder (unsweetened)
- 1/2 cup quick oats*
- 1/4 teaspoon salt
- 1/3 cup maple syrup or honey
- 2 tablespoons coconut sugar
- 1/4 cup coconut oil
- 2/3 cups chocolate chips
- 1 3/4 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 2/3 cup rolled oat flakes
*If you only have rolled oats on hand, just pulse the rolled oats a few times in the blender to get to the consistency of quick oats.
Preparation:
Preheat oven to 350 F. Grease or spray an 8”x 8” baking pan.
Combine all ingredients except for the chocolate chips. Use a food processor (preferred) or mixer to blend until the batter is completely smooth. Stir in the chocolate chips, then pour into a greased 8×8 pan.
Bake for 15-18 minutes. Remove from the oven and let cool completely before cutting.
