Marinated Vegetable Salad

This marinated Vegetable Salad has fresh flavors, beautiful colors, and tons of crunchy goodness. It is a perfect make-ahead side dish that is quick and easy to prepare, especially during the warm summer days when you find lots of fresh vegetables at your local Farmers Markets.

Preparation time: 20 minutes

Yield: 10 Servings

Ingredients:

  • 2 cups cauliflower florets
  • 2 cups grape tomatoes, or firm tomatoes, chopped
  • 2 cups zucchini, chopped
  • 1 English cucumber, chopped
  • 1/2 medium red onion, chopped
  • 1 red, orange, or yellow bell pepper, chopped

Marinade:

  • 2/3 cup extra virgin olive oil
  • 1/3 cup red wine vinegar
  • 3 garlic cloves, minced
  • 1 shallot, minced
  • 4 1/2  tablespoons Dijon mustard
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • salt and pepper to taste

Preparation: 

In a large bowl, whisk together the marinade ingredients and add salt and pepper to taste. Add all chopped vegetables and stir to coat well.  Marinate, in the refrigerator for at least 4 hours, preferably overnight, and serve.
