Sweet and Tangy Slaw

This marinated Vegetable Salad has fresh flavors, beautiful colors, and tons of crunchy goodness. It is a perfect make-ahead side dish that is quick and easy to prepare, especially during the warm summer days when you find lots of fresh vegetables at your local Farmers Markets.

Preparation time: 20 minutes

Yield:  4-6 side dish servings


  • 1/4 head of green cabbage, shredded
  • 1/4 head of red cabbage, shredded
  • 1 large carrot, grated
  • 1/2 small red onion, thinly shaved
  • 4-5 red radishes, shredded


  • 1/8 cup apple cider vinegar
  • 3 tablespoons olive oil
  • 3/4 tablespoon honey (or more, to taste)
  • 2 teaspoons Dijon mustard
  • 1/2 teaspoon celery seed
  • salt to taste
  • black pepper or to taste


Add the shredded cabbage, carrot, radish, and onion to a large bowl.

In a separate bowl add the dressing ingredients and whisk to combine. Taste the dressing and add a little more of any of the ingredients to flavor as you wish.

Add about half of the dressing to the cabbage mixture and gently toss. Slowly add more dressing until you’ve reached the desired consistency.
